Easy Eggless Salad Sandwich
All-in-one, make your own mayo!
Even if you didn’t like egg salad like I didn’t as a kid, you will love this version! It’s easy, tasty and takes no time to make!
Easy Eggless Salad Sandwich

Ingredients
1 block tofu, drained, and cut in half
1/4 of a small onion, finely chopped
1 celery stick, finely chopped
1 T sweet relish
1 T dill relish (optional, but recommended)
3 or more T homemade mayo
freshly ground black pepper
Mayo:
your other half block of tofu
1 tsp onion powder/granules
1/2 tsp garlic powder/granules
1/2 – 1 tsp kala namak (eggy black salt) you can buy here
1/4 tsp celery seed
1-2 T rice vinegar
1 tsp mustard
1-2 tsp sweetener (I use monk fruit, maple syrup or agave nectar) to taste
optional: unsweetened plant milk – add a little at a time if you need to smooth it out some more
Blend everything in a blender until smooth.
*make sure you buy Kala Namak or Indian black salt NOT black salt or Himalayan black salt. The Kala Namak is a sulfurous salt which gives it the eggy smell and taste. You can also use it in your tofu scrambles!
Instructions
Take half a block of tofu and mash it in a bowl with a fork (or crumble with your fingers). Mix in everything else then taste for seasoning.
Serve on Ezekiel (Food For Life), Alvarado Street or sourdough bread lightly toasted (or not) with an extra spread of mayo if desired.
