Easy Burrito
In my quest to feed my family an easy, tasty and nutritious meal, and as a way to show my mentoring clients just how easy it is, this burrito was born! Not only will you love it, you will find yourself craving it!
Easy Burrito
recipe from Lisa Rice's Kitchen Plantastic
Ingredients
1 package Food For Life or Alvarado Street Bakery sprouted wheat tortillas
1 can fat-free refried pinto beans
1 can black beans, rinsed and drained
1 bag frozen pepper and onion mix, thawed
1 bag frozen roasted/grilled corn, thawed
Pico De Gallo or Salsa
Avocado or guacamole
Pickled jalapeños (we love TJ’s sweet & Spicy)
Credo Foods Queso or make our super easy raw cashew queso.
You can also use fresh veggies instead of packaged. Try it!
3 portobello mushrooms, sliced (not too thin!)
1 onion sliced
1 red bell pepper, sliced
1 green bell pepper sliced
1 cup fresh or thawed frozen roasted/grilled corn
1 jalapeño pepper seeded and sliced thin
2-3 cloves minced garlic (or a tsp of jarred)
Salt, pepper and ground cumin to taste
Instructions
Heat a wide pan.
1) Put your tortilla on a flat surface and spread a spoonful of refried beans in a line in the middle.
2) Spoon on some black beans, peppers and onion, corn, Pico and.or salsa, avocado or guac, jalapeños, and queso.
3) Fold in sides then roll and tuck until the ingredients are rolled up inside (see attached short video on how to roll).
4) Place the burrito seam side down in the hot pan. Cook for several minutes then flip over and cook for a few more minutes, You want the cooked side to be slightly browned and crispy. Remove to cutting board cut in half and enjoy!
If you’re cooking fresh vegetables:
When the skillet is hot, throw in the onions and peppers, stirring often. When they start to stick drizzle in a little water or vegetable broth. Cook 5 minutes and add garlic and mushrooms plus seasonings and continue to sauté (adding liquid as needed to prevent sticking) until the mushrooms are cooked but not too soft, add corn and stir, cook one minute more until heated through.
Roll into burrito with other ingredients and cook in dry hot pan as above.
Other optional ingredients to layer in your burrito include chopped cilantro, shredded cabbage or baby spinach, tofu or Upton’s seitan chorizo, and any beans and vegetables of your choice!
Note: 365 & Trader Joe’s low fat refried beans, and Credo Queso do not contain oil.
