Mmmm....caramel apples!
Who doesn’t remember those sticky, pull-your-fillings out, yummy caramel apples from when you were a kid? I LOVED them but almost never ate the sour granny smith apple underneath the candy coating. This recipe will do the opposite! You will look for any vehicle with which to dip in and enjoy! I especially love Fuji apples, but this is also great on other fruit like bananas, especially swirled in banana Nice Cream. I may be seen, on occasion, sneaking a spoonful of straight date caramel into my mouth when no one is looking…
Date Caramel

Ingredients
1 cup pitted medjool dates
1 1/4 cup (or more) plant milk (start with less and add as needed)
1 tsp Vanilla
Pinch of salt
Sliced apples (we love fuji), bananas, or your favorite fruit for dipping. Or swirled in your nice cream!
Variation: add a 1 T of peanut, almond or cashew butter (not spread! It should contain only nuts, or nuts and salt).
*Variation 2: Halvah date caramel! I discovered this while on a YouTube Live with Kathy Hester. I was making toppings for oatmeal and overnight oats and I ran out of nut butters. I had been thinking about making a date-based halvah. So for our live show I used tahini and cardamom and it was DE-licious!
Instructions
Blend dates, plant milk, vanilla and salt (and nut/seed butter if including) in your Nutribullet/Magic bullet or blender until smooth. You may need to add a little more liquid depending on how dry your dates are. It should be smooth and creamy with no date pieces or bits.
